Preparation
  1. Start by peeling and slicing the apples into wedges. Place them in a large bowl.
  2. In a separate bowl, combine the brown sugar, granulated sugar, cornstarch, and cinnamon. Mix well, then pour this over the apples.
  3. Drizzle the melted butter, lemon juice, and vanilla extract over the apple mixture. Toss everything together until the apples are well coated.
Cooking
  1. Transfer the apple mixture into the slow cooker. Set it on low and cook for 4-5 hours, until the apples are tender and the sauce is bubbly.
Serving
  1. Once done, serve the warm apples immediately. They can be enjoyed alone or as a topping for pancakes or vanilla ice cream.

Notes

Make sure to slice the apples evenly to ensure uniform cooking. You can adjust the sweetness by adding more or less sugar based on your preference. For a thicker sauce, increase the cornstarch slightly. Store leftovers in the refrigerator for up to a week; they reheat nicely! Consider adding a pinch of nutmeg for extra spice or swapping granulated sugar for maple syrup for a different flavor profile.
